Dairy Processing Technologies
Extension officers at the training course on dairy processing in Idleb, Syria.
Dairy production and value addition is a major income opportunity for rural women. In response to a request from the Agricultural Directorate in Idleb province, Syria, ICARDA conducted a training course on dairy processing for extension officers, to support national efforts on dairy promotion. The course was held on 6-8 January, at the Ministry of Agriculture’s Training and Upgrading Center in Idleb. There were 29 participants, all women, from the Department of Rural Women’s Development. The course covered a range of topics: milk secretion (physiology), milk composition, milk quality, and processing of four types of dairy products – cheese, yogurt, labneh (a form of dense yogurt with most of the water content removed), and whey products.
